Cilantro Pesto

Sometimes a simple recipe can go a long way.  For example, this cilantro pesto recipe is simply delicious on a cracker, piece of celery or toast, or as a chicken topping or spread.  My favorite use is as a salad topping.  Wow your guests with this easy, delicious and healthy recipe the next time you entertain!

I prefer to soak my almonds or walnuts starting a day ahead for almonds and a few hours for walnuts.  This allows for better digestion and a tender consistency. 

1 Cup fresh cilantro leaves
1 clove of garlic
1/2 Cup of almonds or walnuts
Flaxseed or olive oil
Sea salt

Blend all ingredients in a blender or food processor. Use salt to taste. Add 1 Tablespoon of oil at a time until desired consistency.

You can add this to your fish dish, pasta or use as a spread or dip.
