Mango Cherry Salad with Avocado

You will need:

  • 8-10 cups Spring Salad Mix
  • 3 Tablespoons tart cherry juice
  • 1 Tablespoon apple cider vinegar
  • 2 Tablespoons olive or flaxseed oil
  • 1-2 Tablespoon honey
  • 2 Ripe Avocados, peeled, seeded and sliced
  • 1 large, ripe mango, peeled, seeded and sliced
  • 1 1/3 Cups dried tart cherries
  • 1/3 cup diced red onion
  • sea salt, pepper to taste

Make a "dressing" by blending cherry juice, apple cider vinegar, olive or flax oil, and honey. Toss this with the spring salad mix. Put this on individual plates or a large serving bowl. Layer with avocado slices, onion slices, mango slices and sprinkle with dried cherries. Sprinkle with sea salt and pepper to taste is desired.
