Watercress and Avocado Cleansing Salad

I know that when I go through an at-home body cleanse program, it helps to have a collection of easy recipes that will support the process.  This is one of those easy to throw together salads that can be used as a perfect lunch.  The watercress will help your body cleanse while the avocado will provide not only essential fats, but the feeling of fullness that helps to prevent unnecessary snacking in the afternoon.

Ingredients;

  • 1/4 cup apple cider vinegar
  • 1 tablespoon grated sweet onion
  • 1/4 cup finely grated and peeled Gala apple
  • 4 teaspoons Bragg's Amino Acids
  • 1 teaspoon brown sugar (or a pinch of stevia)
  • 3 tablespoons olive oil
  • 6 cups watercress (thin stems and leaves only; from 1 large bunch)
  • Romain Lettuce
  • 1 firm-ripe avocado

Directions;

Mix the apple cider vinegar, onion, apple, Bragg's aminos, and sugar (or stevia) until sugar has dissolved, then stir in olive oil. Just before serving, toss the watercress with your dressing. Place this on a plate on top of Romain lettuce leaves. Peel and slice your avocado and lay on top of the watercress.
